Blueberry Bourbon Glazed Chicken Kebabs

Sweet, tangy, and smoky kebabs glazed with our signature Blueberry Bourbon Jam — perfect for grilling season!
Ingredients
For the Marinade:
- 1/4 cup Blueberry Bourbon Jam
- 2 tbsp Soy Sauce
- 1 tbsp Balsamic Vinegar
- 1 tbsp Olive Oil
- 2 tsp Dijon Mustard
- 2 cloves Garlic, minced
- 1/2 tsp Smoked Paprika
- Salt & Pepper to taste
For the Kebabs:
- 1.5 lbs Chicken Breast or Thighs, cut into 1.5" cubes
- 1 Red Onion, cut into chunks
- 1 Red Bell Pepper, cut into chunks
- 1 Zucchini, sliced
- Skewers (wooden or metal)
Instructions
- Make the Marinade: In a bowl, whisk together all marinade ingredients until smooth.
- Marinate the Chicken: Add chicken to a zip-top bag or bowl, pour marinade over, and toss to coat. Let it marinate for at least 30 min (or overnight).
- Assemble the Kebabs: Thread chicken and veggies onto skewers, alternating pieces.
- Grill: Preheat grill to medium heat. Grill kebabs for 12–15 min, turning occasionally, until chicken is cooked through.
- Glaze: During the last few minutes of grilling, brush extra Blueberry Bourbon Jam over the kebabs.
- Serve: Sprinkle with chopped parsley or green onion. Optional: serve with a side of rice or grilled corn.
