Tofu Vegetable Stir Fry

A vibrant and satisfying stir fry with crispy tofu, tender veggies, and a Caribbean jam glaze. Vegan and vegetarian friendly!
Ingredients
- 16oz Stir Fry Vegetables
- 4oz Hungry Bear Spicy Caribbean Jam
- 6oz Spaghetti Pasta
- 14oz Block Extra Firm Tofu
- Salt and Pepper to taste
- 1–2 tbsp Olive Oil
Instructions
- Press the tofu: Drain and place between paper towels with a heavy object on top for 5 minutes to remove moisture.
- Cook pasta according to package instructions. Drain and set aside.
- Cut tofu into 1-inch cubes. Heat oil in a pan over medium heat, add tofu, season with salt and pepper, and sauté 5–8 minutes until golden brown.
- Add stir fry vegetables and cook about 8 minutes, until tender.
- Add cooked pasta and Spicy Caribbean Jam. Stir to combine and heat through.
- Serve and enjoy!
