Tofu Vegetable Stir Fry

A vibrant and satisfying stir fry with crispy tofu, tender veggies, and a Caribbean jam glaze. Vegan and vegetarian friendly!

  1. Press the tofu: Drain and place between paper towels with a heavy object on top for 5 minutes to remove moisture.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. Cut tofu into 1-inch cubes. Heat oil in a pan over medium heat, add tofu, season with salt and pepper, and sauté 5–8 minutes until golden brown.
  4. Add stir fry vegetables and cook about 8 minutes, until tender.
  5. Add cooked pasta and Spicy Caribbean Jam. Stir to combine and heat through.
  6. Serve and enjoy!
